Moosewood Mushroom & Barley soup

This mushroom soup is really a very rich luscious soup. Very easy to make. Total prep is about 20min or so. I’ve learned to let this simmer at a very low heat for as long as you can. Optimally 90 min so simmer really brings this to life. I also like to use a Zinfandel Port instead the the called for sherry. this one is a damn yummy soup!
